Description
Creamy Asiago Chicken is a rich and flavorful dish featuring tender chicken breasts in a savory sauce made with mushrooms, garlic, white wine, and a blend of mustards and Asiago cheese. Elegant enough for guests, easy enough for a weeknight dinner.
Ingredients

2 tablespoons oil or butter

4 boneless skinless chicken breasts (6 oz each), pounded thin

Salt and pepper to taste

8 ounces mushrooms, sliced

1 small onion, diced

2 cloves garlic, chopped

1 teaspoon fresh thyme, chopped

1/4 cup dry white wine (or chicken broth)

1/2 cup chicken broth

1/2 cup heavy/whipping cream

1 tablespoon grainy mustard

1 tablespoon Dijon mustard

Salt and pepper to taste

1/2 cup Asiago cheese, grated
Instructions

Season chicken breasts with salt and pepper.

Heat oil or butter in a large skillet over medium-high heat. Add chicken and sear until golden brown and cooked through (about 4–5 minutes per side). Remove and set aside.

In the same pan, add mushrooms and cook until browned. Add onions and sauté until translucent.

Stir in garlic and thyme, cooking for 1 minute.

Pour in wine (or broth) and scrape up browned bits. Simmer until reduced by half.

Add remaining chicken broth, cream, both mustards, and Asiago cheese. Stir until cheese melts and sauce is smooth.

Return chicken to the skillet and simmer for 2–3 minutes until heated through and well coated in sauce.

Adjust seasoning with salt and pepper. Serve hot.
Notes
For extra richness, add a pat of butter before serving.
Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce
Asiago can be swapped with Parmesan if desired.
