Description

Creamy Asiago Chicken is a rich and flavorful dish featuring tender chicken breasts in a savory sauce made with mushrooms, garlic, white wine, and a blend of mustards and Asiago cheese. Elegant enough for guests, easy enough for a weeknight dinner.


Ingredients

  • 2 tablespoons oil or butter

  • 4 boneless skinless chicken breasts (6 oz each), pounded thin

  • Salt and pepper to taste

  • 8 ounces mushrooms, sliced

  • 1 small onion, diced

  • 2 cloves garlic, chopped

  • 1 teaspoon fresh thyme, chopped

  • 1/4 cup dry white wine (or chicken broth)

  • 1/2 cup chicken broth

  • 1/2 cup heavy/whipping cream

  • 1 tablespoon grainy mustard

  • 1 tablespoon Dijon mustard

  • Salt and pepper to taste

  • 1/2 cup Asiago cheese, grated


Instructions

  • Season chicken breasts with salt and pepper.

  • Heat oil or butter in a large skillet over medium-high heat. Add chicken and sear until golden brown and cooked through (about 4–5 minutes per side). Remove and set aside.

  • In the same pan, add mushrooms and cook until browned. Add onions and sauté until translucent.

  • Stir in garlic and thyme, cooking for 1 minute.

  • Pour in wine (or broth) and scrape up browned bits. Simmer until reduced by half.

  • Add remaining chicken broth, cream, both mustards, and Asiago cheese. Stir until cheese melts and sauce is smooth.

  • Return chicken to the skillet and simmer for 2–3 minutes until heated through and well coated in sauce.

 

  • Adjust seasoning with salt and pepper. Serve hot.

Notes

For extra richness, add a pat of butter before serving.

Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce

Asiago can be swapped with Parmesan if desired.
