Creamy Crockpot Chicken Gnocchi Soup: A Comforting One-Pot Meal

Description

This hearty and comforting soup combines tender chicken, soft gnocchi, and fresh vegetables in a creamy broth. Perfect for busy weeknights or cozy weekends, it’s a delicious one-pot meal that the whole family will love.


Ingredients

  • 1½ pounds boneless, skinless chicken thighs or breasts

  • 3–4 medium carrots, peeled and chopped

  • 1–2 stalks celery, chopped

  • ½ medium yellow or white onion, chopped

  • 4–5 cloves garlic, minced

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon Italian seasoning

  • Salt and black pepper, to taste

  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)

  • Pinch red pepper flakes (optional)

  • 4 cups low-sodium chicken stock or broth

  • 1 cup cream or half-and-half

  • 1–2 tablespoons cornstarch

  • 1 pound potato gnocchi

  • 3 cups baby spinach

  • 4 slices cooked bacon, crumbled (optional, for serving)


Instructions

 

  1. Place chicken, carrots, celery, onion, garlic, parsley, Italian seasoning, salt, and pepper into the slow cooker. Add Better than Bouillon and red pepper flakes if using.

  2. Pour in chicken stock, stir gently, cover, and cook on low for 6–8 hours or high for 4 hours.

  3. Shred the chicken directly in the slow cooker using two forks.

  4. In a small bowl, whisk together the cream and cornstarch. Add this mixture, along with the gnocchi and spinach, to the slow cooker. Stir to combine.

  5. Cover and cook on high for an additional 30–45 minutes, or until the gnocchi are tender.

  6. Serve hot, topped with crumbled bacon if desired

Notes

For a thicker soup, add more cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon cold water) during the last 30 minutes of cooking.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

This soup does not freeze well due to the cream and gnocchi.

For a lighter version, substitute half-and-half for the cream
