Ingredients
-
1½ pounds boneless, skinless chicken thighs or breasts
-
3–4 medium carrots, peeled and chopped
-
1–2 stalks celery, chopped
-
½ medium yellow or white onion, chopped
-
4–5 cloves garlic, minced
-
2 tablespoons fresh parsley, chopped
-
1 tablespoon Italian seasoning
-
Salt and black pepper, to taste
-
1 teaspoon Better than Bouillon chicken seasoning base (optional)
-
Pinch red pepper flakes (optional)
-
4 cups low-sodium chicken stock or broth
-
1 cup cream or half-and-half
-
1–2 tablespoons cornstarch
-
1 pound potato gnocchi
-
3 cups baby spinach
-
4 slices cooked bacon, crumbled (optional, for serving)
Instructions
-
Place chicken, carrots, celery, onion, garlic, parsley, Italian seasoning, salt, and pepper into the slow cooker. Add Better than Bouillon and red pepper flakes if using.
-
Pour in chicken stock, stir gently, cover, and cook on low for 6–8 hours or high for 4 hours.
-
Shred the chicken directly in the slow cooker using two forks.
-
In a small bowl, whisk together the cream and cornstarch. Add this mixture, along with the gnocchi and spinach, to the slow cooker. Stir to combine.
-
Cover and cook on high for an additional 30–45 minutes, or until the gnocchi are tender.
-
Serve hot, topped with crumbled bacon if desired
Notes
For a thicker soup, add more cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon cold water) during the last 30 minutes of cooking.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
This soup does not freeze well due to the cream and gnocchi.
For a lighter version, substitute half-and-half for the cream
