Description

This indulgent pasta dish combines smoky sausage with a rich, creamy sauce made from heavy cream, tomatoes, and a blend of cheeses. It’s a comforting, one-pan meal that’s perfect for busy weeknights or casual gatherings


Ingredients

  • 1 pound penne pasta (or your favorite pasta)

  • 1 pound smoked sausage, cut into ¼-inch rounds

  • 2 tablespoons olive oil

  • 1 large onion, finely diced

  • 3 cloves garlic, minced

  • 1 teaspoon smoked paprika (or regular paprika)

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 2 tablespoons tomato paste

  • 1 cup chicken broth (low sodium)

  • ⅓ cup heavy cream

  • 1 cup white cheddar cheese, divided

  • ¼ cup Parmesan cheese, grated

  • 2 teaspoons Italian seasoning

  • ½ teaspoon salt

  • ¼ teaspoon black pepper


Instructions

  • Cook the pasta according to package directions; drain and set aside.

  • In a large skillet, heat olive oil over medium heat.

  • Add the sliced smoked sausage and cook until browned, about 5 minutes.

  • Remove the sausage from the skillet and set aside.

  • In the same skillet, add the diced onion and cook until softened, about 3 minutes.

  • Add the minced garlic and cook for an additional 30 seconds until fragrant.

  • Stir in the smoked paprika, diced tomatoes, tomato paste, chicken broth, heavy cream, Italian seasoning, salt, and black pepper.

  • Bring the mixture to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.

  • Return the cooked sausage to the skillet and stir in ½ cup of the white cheddar cheese and the grated Parmesan cheese.

  • Add the cooked pasta to the skillet and toss to coat evenly with the sauce.

  • Sprinkle the remaining ½ cup of white cheddar cheese over the top and cover the skillet.

  • Let it sit for 2–3 minutes until the cheese is melted and bubbly.

 

  • Serve hot, garnished with additional Parmesan cheese if desired

Notes

For a spicier kick, add a pinch of red pepper flakes along with the garlic.

Feel free to substitute the smoked sausage with other types of sausage or protein of your choice.

This dish pairs well with a simple green salad or steamed vegetables.
