Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 tablespoon butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 1/2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Fresh parsley, chopped (for garnish)
Instructions
-
Prepare the chicken: Season the chicken breasts on both sides with salt, pepper, garlic powder, onion powder, and paprika.
-
Cook the chicken: Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set it aside.
-
Make the sauce: In the same skillet, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
-
Prepare the rice: Stir in the rice and cook for 1-2 minutes, allowing the rice to absorb the flavors from the onion and garlic. Add the chicken broth, heavy cream, Parmesan cheese, thyme, and oregano. Stir to combine and bring to a simmer.
-
Cook the rice: Once the broth and cream come to a simmer, reduce the heat to low, cover the skillet, and let the rice cook for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
-
Add the chicken back: Once the rice is cooked, return the chicken breasts to the skillet, nestling them into the rice and sauce. Cover and let everything simmer for an additional 5 minutes to warm the chicken through and allow the flavors to meld.
-
Garnish and serve: Garnish with fresh chopped parsley and serve the creamy smothered chicken and rice hot.
Notes
- You can use chicken thighs instead of chicken breasts for a juicier and more flavorful dish.
- If you want a thicker sauce, let the liquid reduce for a few extra minutes before adding the chicken back in.
- For extra richness, add a bit more Parmesan cheese to the sauce or stir in some cream cheese.
