  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the chicken: Season the chicken breasts on both sides with salt, pepper, garlic powder, onion powder, and paprika.

  2. Cook the chicken: Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set it aside.

  3. Make the sauce: In the same skillet, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

  4. Prepare the rice: Stir in the rice and cook for 1-2 minutes, allowing the rice to absorb the flavors from the onion and garlic. Add the chicken broth, heavy cream, Parmesan cheese, thyme, and oregano. Stir to combine and bring to a simmer.

  5. Cook the rice: Once the broth and cream come to a simmer, reduce the heat to low, cover the skillet, and let the rice cook for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.

  6. Add the chicken back: Once the rice is cooked, return the chicken breasts to the skillet, nestling them into the rice and sauce. Cover and let everything simmer for an additional 5 minutes to warm the chicken through and allow the flavors to meld.

  7. Garnish and serve: Garnish with fresh chopped parsley and serve the creamy smothered chicken and rice hot.

  • You can use chicken thighs instead of chicken breasts for a juicier and more flavorful dish.
  • If you want a thicker sauce, let the liquid reduce for a few extra minutes before adding the chicken back in.
