Ingredients
For the Zucchini:

2 lbs zucchini, cubed

Instructions

Roast the Zucchini:

Preheat oven to 400°F (200°C).

Toss cubed zucchini with olive oil, paprika, salt, and pepper.

Spread on a baking sheet and roast for 20–25 minutes until soft and lightly browned. Set aside to cool slightly.

In a medium bowl, combine sour cream, garlic, tomato paste, chopped dill, chopped basil, and a pinch of salt.
