Description

This creamy zucchini sauce is a flavorful, velvety side dish or topping made with tender roasted zucchini and a savory sour cream-based herb sauce. It’s quick, healthy, and perfect for serving over pasta, rice, grilled meats, or simply enjoying as a dip.

For the Zucchini:

  • 2 lbs zucchini, cubed

  • 3 tablespoons olive oil

  • 1 tablespoon paprika

  • Salt and pepper, to taste

For the Sauce:

  • 1 cup sour cream

  • 2 garlic cloves, minced

  • 1 tablespoon tomato paste

  • 2 tablespoons chopped fresh dill

  • 2 tablespoons chopped fresh basil

  • Salt, to taste


Instructions

  • Roast the Zucchini:

    • Preheat oven to 400°F (200°C).

    • Toss cubed zucchini with olive oil, paprika, salt, and pepper.

    • Spread on a baking sheet and roast for 20–25 minutes until soft and lightly browned. Set aside to cool slightly.

  • Prepare the Sauce:

    • In a medium bowl, combine sour cream, garlic, tomato paste, chopped dill, chopped basil, and a pinch of salt.

    • Mix until smooth and well combined.

 

  • Combine:

    • Add the roasted zucchini to the sauce.

    • Gently mix to coat the zucchini evenly.

    • Serve warm or chilled as a side dish, pasta topping, or dip.

Notes

For a smoother texture, blend the roasted zucchini into the sauce using an immersion blender.

You can substitute sour cream with Greek yogurt for a lighter version.

This sauce pairs wonderfully with pasta, roasted potatoes, grilled chicken, or even inside wraps.
