Description

Crispy on the outside, creamy and cheesy on the inside — these Bean & Cheese Taquitos are a quick and satisfying meal or snack! Filled with seasoned refried beans, two cheeses, and a punch of flavor, they’re even better when paired with a zesty Green Chile Sour Cream Sauce. Great for weeknights, parties, or game day!

For the Taquitos:

  • 1 (16 oz) can refried beans

  • ½ cup shredded pepper Jack cheese (about 2 oz)

  • 1 tsp ground cumin

  • 2 tsp chili powder

  • 12 small corn or flour tortillas

  • 1 cup shredded cheddar cheese (about 4 oz)

  • Neutral oil (vegetable, avocado, or canola), for frying

For the Green Chile Sour Cream Sauce:

  • 1 (4 oz) can green chiles, drained

  • ½ cup sour cream

  • ¼ cup fresh cilantro, chopped

  • 1 clove garlic, minced

  • 1 Tbsp fresh lime juice

  • Kosher salt, to taste

  • Freshly ground black pepper, to taste


Instructions

Make the Filling:

  1. In a bowl, combine refried beans, pepper Jack, chili powder, and cumin. Mix until smooth.

Assemble the Taquitos:

  1. Warm tortillas slightly to prevent cracking.

  2. Spread 2 tablespoons of the bean mixture down the center of each tortilla.

  3. Sprinkle with cheddar cheese and roll up tightly.

Fry the Taquitos:

  1. In a skillet, heat ½ inch of neutral oil over medium heat.

  2. Fry taquitos in batches, seam side down first, for 2–3 minutes per side or until golden and crispy.

  3. Drain on paper towels.

Make the Sauce:

  1. In a blender or food processor, combine green chiles, sour cream, cilantro, garlic, and lime juice. Blend until smooth.

  2. Season with salt and pepper to taste.

Serve:

  1. Serve taquitos hot with green chile sour cream sauce on the side or drizzled over top.

Notes

Baking option: Brush taquitos with oil and bake at 425°F (220°C) for 15–20 minutes, turning once, for a lighter version.

Tortilla tip: Corn tortillas are more traditional, but flour tortillas are easier to roll and crisp beautifully.
