Ingredients
-
3 packages cheddar pierogies (frozen)
-
4 cups chicken broth, divided
-
8 oz cream cheese
-
1 cup shredded cheddar cheese, divided
-
1 lb kielbasa, sliced
-
Salt and pepper, to taste
Instructions
-
Spray the inside of your crockpot with non-stick cooking spray.
-
Place the frozen cheddar pierogies in the bottom of the crockpot.
-
Layer the sliced kielbasa on top of the pierogies.
-
In a medium bowl, whisk together 3 cups of the chicken broth with the cream cheese until smooth and creamy. Pour this mixture evenly over the pierogies and kielbasa.
-
Sprinkle half of the shredded cheddar cheese over the mixture.
-
Add salt and pepper to taste.
-
Pour the remaining 1 cup of chicken broth over the top.
-
Cover and cook on low for 3-4 hours or until pierogies are tender and the casserole is heated through.
-
About 15 minutes before serving, sprinkle the remaining cheddar cheese on top, cover again and let melt.
-
Serve warm.
Notes
You can add chopped onions or bell peppers for extra flavor.
Use smoked kielbasa for a richer taste.
If you prefer a thicker sauce, reduce the broth slightly.
This recipe works well as a make-ahead meal and reheats nicely.
