Description
A quick and flavorful dish that can be made in just 10 minutes! This Easy Egg Fried Rice combines perfectly cooked jasmine rice, scrambled eggs, and a savory mix of soy sauce and sesame oil. Ideal for a fast meal or using up leftover rice.
Ingredients
- 2 cups cooked jasmine rice (cold, day-old ideally)
- 1 green onion (finely chopped)
- 2 1/2 tablespoons regular soy sauce (not dark soy sauce)
- 1/2 tablespoon sesame oil
- 4 large eggs (beaten)
- 2 tablespoons vegetable oil (or any neutral oil)
Instructions

Heat Vegetable Oil:
In a large pan or wok, heat the vegetable oil. If using a wok, allow the oil to smoke, but if using a normal pan, skip smoking the oil. -
Cook the Eggs:
Pour the beaten eggs into the pan. Quickly stir-fry the eggs so they take shape. -
Add the Rice:
Once the eggs take shape but are still moist, quickly toss in the cold rice. If the rice is clumped together, break it apart in the pan. -
Add Green Onions:
Push everything to the side of the pan, then add the remaining oil into the empty space with the green onions. Stir the green onions into the rice and eggs. -
Add Soy Sauce and Sesame Oil:
Pour the soy sauce and sesame oil along the edges of the pan. Toss everything together until the rice is evenly coated and slightly browned. -
Serve:
Remove from heat and serve hot. Enjoy while it’s hot!
Notes
- For the best fried rice, use cold, day-old rice as it prevents the rice from becoming mushy when stir-fried.
- You can add extra vegetables or proteins like shrimp, chicken, or peas for variation.
