  • 2 large chicken breasts, diced
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 bell pepper, diced (red, green, or yellow)
  • 1 medium onion, diced
  • 1 packet fajita seasoning mix (or homemade fajita seasoning)
  • 1 tablespoon olive oil
  • 1/2 cup shredded cheese (optional, for topping)
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Season with salt and pepper.
  • Add the diced bell pepper and onion to the skillet with the chicken, and cook for another 3-4 minutes, until the vegetables soften.
  • Stir in the fajita seasoning mix, followed by the rice, chicken broth, and diced tomatoes. Bring to a simmer and let it cook for 2-3 minutes.
  • Transfer the mixture to a greased 9×13-inch baking dish. Cover the dish with aluminum foil and bake for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed.
  • Remove the foil and sprinkle the shredded cheese over the casserole (if using). Return the casserole to the oven and bake for an additional 5 minutes, or until the cheese is melted.
  • Garnish with fresh cilantro if desired and serve.

Notes

  • For a spicier version, add some chopped jalapeños or extra chili powder.
  • You can swap the chicken for ground beef or turkey if preferred.
  • To make this dish even quicker, you can use pre-cooked rotisserie chicken.
