6 English muffins, split in half

8 ounces Odom’s Tennessee Pride Mild Country Sausage (thawed if frozen)

½ cup chopped yellow onion

½ cup chopped green bell pepper

½ cup chopped fresh button mushrooms

8 large eggs, beaten

½ teaspoon salt

¼ teaspoon ground black pepper

1 ½ cups shredded part-skim mozzarella cheese
Instructions

Preheat the Oven:

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray it with Pam Original No-Stick Cooking Spray.
