Description

These English Muffin Breakfast Pizzas are a fun and easy way to start your day! With a savory sausage and veggie topping, scrambled eggs, and melted mozzarella cheese, these mini breakfast pizzas are perfect for a crowd or a quick, customizable breakfast.

  • 6 English muffins, split in half

  • Pam Original No-Stick Cooking Spray

  • 8 ounces Odom’s Tennessee Pride Mild Country Sausage (thawed if frozen)

  • ½ cup chopped yellow onion

  • ½ cup chopped green bell pepper

  • ½ cup chopped fresh button mushrooms

  • 8 large eggs, beaten

  • ½ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 1 ½ cups shredded part-skim mozzarella cheese


Instructions

  • Preheat the Oven:

    • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray it with Pam Original No-Stick Cooking Spray.

  • Prepare the English Muffins:

    • Split the English muffins in half and place them on the prepared baking sheet. Lightly spray the top of each muffin half with the cooking spray.

  • Cook the Sausage:

    • In a large skillet over medium heat, cook the sausage, breaking it apart with a spatula as it cooks. Once browned and cooked through, remove from heat and set aside.

  • Sauté the Vegetables:

    • In the same skillet, add the chopped onion, bell pepper, and mushrooms. Sauté for 3-4 minutes, or until the vegetables are soft and fragrant.

  • Scramble the Eggs:

    • In a bowl, whisk together the eggs, salt, and pepper. Add the beaten eggs to the skillet with the vegetables and scramble until the eggs are fully cooked, about 3-5 minutes.

  • Assemble the Pizzas:

    • Spoon an even amount of the sausage mixture onto each English muffin half. Top each muffin with the scrambled egg mixture, then sprinkle with shredded mozzarella cheese.

  • Bake the Pizzas:

    • Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly, and the edges of the English muffins are lightly toasted.

 

  • Serve:

    • Remove from the oven and allow to cool slightly before serving.

Notes

  • You can customize the toppings by adding other veggies, such as spinach, tomatoes, or olives, or swapping the sausage for bacon or ham.

  • These breakfast pizzas are great for meal prep. Just assemble them ahead of time and store in the fridge for up to 3 days. Reheat in the microwave or oven.

 

  • For extra flavor, try adding a sprinkle of red pepper flakes or hot sauce on top.
