Ingredients

1 pound ground beef

1 cup long-grain white rice

2 cups beef broth

1 large onion, thinly sliced

1 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

Salt and pepper, to taste

1 cup shredded Swiss cheese

½ cup French fried onions (for topping)

Fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 350°F (175°C).

In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 10–12 minutes.

Add ground beef to the skillet with onions. Cook until browned, breaking it up as it cooks. Drain excess fat.

Stir in garlic powder, onion powder, dried thyme, salt, and pepper.

In a baking dish, combine rice, beef broth, and the beef-onion mixture. Mix well.

Cover tightly with foil and bake for 45 minutes or until rice is tender and liquid is absorbed.

Remove from oven, sprinkle shredded Swiss cheese evenly over the casserole.

Return to oven, uncovered, and bake for an additional 10 minutes until cheese is melted and bubbly.

Remove casserole from oven, top with French fried onions, and bake 5 more minutes until crispy.

Garnish with fresh parsley before serving.
Notes
For extra flavor, use homemade beef broth or low-sodium broth and adjust salt accordingly.
Add a side salad or steamed vegetables for a complete meal.
Leftovers reheat well and can be frozen for up to 3 months.
Substitute Swiss cheese with Gruyère or mozzarella for different flavors.
