French Onion Ground Beef and Rice Casserole

Description

A comforting, flavorful casserole that combines savory ground beef, tender rice, caramelized onions, and melted Swiss cheese, topped with crispy French fried onions. Perfect for a hearty family dinner with minimal fuss!


Ingredients

  • 1 pound ground beef

  • 1 cup long-grain white rice

  • 2 cups beef broth

  • 1 large onion, thinly sliced

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme

  • Salt and pepper, to taste

  • 1 cup shredded Swiss cheese

  • ½ cup French fried onions (for topping)

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 350°F (175°C).

  • In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 10–12 minutes.

  • Add ground beef to the skillet with onions. Cook until browned, breaking it up as it cooks. Drain excess fat.

  • Stir in garlic powder, onion powder, dried thyme, salt, and pepper.

  • In a baking dish, combine rice, beef broth, and the beef-onion mixture. Mix well.

  • Cover tightly with foil and bake for 45 minutes or until rice is tender and liquid is absorbed.

  • Remove from oven, sprinkle shredded Swiss cheese evenly over the casserole.

  • Return to oven, uncovered, and bake for an additional 10 minutes until cheese is melted and bubbly.

  • Remove casserole from oven, top with French fried onions, and bake 5 more minutes until crispy.

 

  • Garnish with fresh parsley before serving.

Notes

For extra flavor, use homemade beef broth or low-sodium broth and adjust salt accordingly.

Add a side salad or steamed vegetables for a complete meal.

Leftovers reheat well and can be frozen for up to 3 months.

Substitute Swiss cheese with Gruyère or mozzarella for different flavors.
