Ingredients

Scale

For the Steak Tips:

  • 1 lb sirloin steak, cut into bite-sized cubes

  • 3 tbsp unsalted butter

  • 4 cloves garlic, minced

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika

  • ½ tsp onion powder

  • 1 tbsp olive oil

For the Cheesy Alfredo Sauce:

  • 2 cups heavy cream

  • 1 cup freshly grated Parmesan cheese

  • ½ cup mozzarella cheese

  • 3 tbsp unsalted butter

  • 3 cloves garlic, minced

  • ½ tsp salt

  • ½ tsp black pepper

  • ¼ tsp ground nutmeg

  • ½ cup reserved pasta water

For the Pasta:

  • 12 oz fettuccine or penne

  • 1 tsp salt (for boiling water)

Instructions

  • Cook the Pasta:
Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.

  • Prepare the Steak Tips:
In a large skillet over medium-high heat, heat olive oil. Season steak cubes with salt, black pepper, smoked paprika, and onion powder. Add steak to skillet and sear until browned on all sides, about 3–4 minutes. Remove steak from pan and set aside.

  • Make Garlic Butter for Steak:
In the same skillet, melt butter and add minced garlic. Cook until fragrant, about 1 minute. Return steak to skillet and toss to coat in garlic butter. Remove from heat.

  • Prepare Cheesy Alfredo Sauce:
In a saucepan over medium heat, melt butter. Add minced garlic and sauté until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan, mozzarella, salt, pepper, and nutmeg until cheeses melt and sauce thickens slightly. Add reserved pasta water a little at a time to adjust sauce consistency.

  • Combine Pasta and Sauce:
Toss cooked pasta with Alfredo sauce until evenly coated.

  • Serve:
Plate cheesy rigatoni topped with garlic butter steak tips. Garnish with extra Parmesan or parsley if desired.

Notes

Use sirloin or any tender steak cut for best results.

Reserve pasta water to help loosen the sauce if it gets too thick.

Smoked paprika adds subtle smokiness but can be omitted if preferred.

Freshly grated cheeses melt better and provide richer flavor.
