Description

This Garlic Parmesan Chicken Legs recipe combines tender chicken drumsticks with a rich, flavorful garlic-parmesan marinade. The crispy skin and juicy meat make it a crowd-pleaser, while the addition of seasoned Yukon Gold potatoes enhances the dish for a satisfying, one-pan meal.

  • 1/4 cup olive oil

  • 1 lemon, juiced

  • 1/4 cup grated Parmesan cheese

  • 4 garlic cloves, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 10 small Yukon Gold potatoes, halved

  • 10 chicken drumsticks


Instructions

  • Preheat your oven to 400°F (200°C).

  • In a bowl, combine the olive oil, lemon juice, Parmesan cheese, minced garlic, smoked paprika, dried oregano, dried thyme, salt, and black pepper.

  • Toss the chicken drumsticks in the marinade, ensuring they are evenly coated.

  • Place the halved Yukon Gold potatoes and chicken drumsticks onto a baking sheet. Drizzle any remaining marinade over the potatoes.

  • Bake for 35–45 minutes or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender.

 

  • Serve hot and enjoy!

Notes

For extra crispiness, broil the chicken for 2–3 minutes at the end of the cooking time.

You can substitute other potatoes, but Yukon Golds are especially great for their creamy texture.
