Ingredients
For the garlic Parmesan sauce:

4 tablespoons unsalted butter

3 tablespoons grated Parmigiano Reggiano (Parmesan cheese)

4 cloves garlic, chopped

1 pinch red pepper flakes (optional)

1 tablespoon chopped parsley
For the grilled chicken:

1 pound (about 450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

1 teaspoon Cajun seasoning

Prepare the garlic Parmesan sauce:
In a pan over medium-low heat, melt the butter. Add the chopped garlic and cook until fragrant, about 1 minute. Stir in the grated Parmesan cheese and red pepper flakes (if using), and cook until the cheese melts and the mixture becomes smooth. Remove from heat and mix in the lemon juice and chopped parsley. Set aside. -
Season the chicken:
Place the chicken pieces in a bowl and toss with Cajun seasoning until evenly coated. -
Grill the chicken:
Preheat your grill to medium-high heat. Thread the seasoned chicken pieces onto skewers. Grill the chicken skewers for about 2-4 minutes per side, or until the chicken is cooked through and lightly charred. -
Baste and serve:
During the last minute of grilling, baste the chicken with the prepared garlic Parmesan sauce. Once cooked, remove from the grill and serve immediately.
Notes
For a milder flavor, omit the red pepper flakes.
Serve the grilled chicken over a bed of rice, pasta, or alongside grilled vegetables for a complete meal.
If you prefer, you can cook the chicken in a grill pan on the stovetop.
