Description

Crispy on the outside and tender on the inside, these garlic roast potatoes are a perfect side dish for any meal. Infused with rich garlic flavor and roasted to golden perfection, they’re simple yet bursting with deliciousness.


Ingredients

  • 2 lbs (about 900g) baby potatoes (or your choice of potatoes)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • Salt and pepper to taste
  • Optional: 1 tablespoon lemon juice or zest

 

  • Fresh parsley (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the potatoes, then cut them into halves or quarters, depending on their size.
  • In a large bowl, combine the potatoes with olive oil, minced garlic, rosemary, salt, and pepper. Toss to coat evenly.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast for 40-45 minutes, flipping the potatoes halfway through, until they’re golden and crispy.
  • Optional: Before serving, drizzle with lemon juice and garnish with fresh parsley for an extra burst of flavor.

Notes

  • For extra crispiness, you can parboil the potatoes for 5-7 minutes before roasting.
