- 2 lbs (about 900g) baby potatoes (or your choice of potatoes)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- Salt and pepper to taste
- Optional: 1 tablespoon lemon juice or zest
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes, then cut them into halves or quarters, depending on their size.
- In a large bowl, combine the potatoes with olive oil, minced garlic, rosemary, salt, and pepper. Toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 40-45 minutes, flipping the potatoes halfway through, until they’re golden and crispy.
- Optional: Before serving, drizzle with lemon juice and garnish with fresh parsley for an extra burst of flavor.

Notes
- For extra crispiness, you can parboil the potatoes for 5-7 minutes before roasting.
