Description

These Greek Lemon Chicken Skewers are marinated in a tangy and flavorful lemon and herb mixture, then grilled to perfection. Paired with a refreshing and creamy tzatziki sauce, they make for a delicious and healthy meal. Perfect for a summer BBQ or a Mediterranean-inspired dinner!

For the Greek Lemon Chicken Skewers:

  • 3 tablespoons fresh lemon juice

  • 1 tablespoon red wine vinegar

  • 2 tablespoons extra virgin olive oil

  • 2 cloves of garlic, grated or minced

  • 2 teaspoons dried oregano

  • 1/2 teaspoon dried parsley

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • Salt and fresh ground black pepper to taste

  • 1 1/2 pounds boneless skinless chicken breasts, cut into approximately 1-inch cubes

For the Tzatziki Sauce:

  • 1 cup shredded English cucumber (you can also dice the cucumber)

  • 1 1/2 cups plain Greek yogurt (non-fat, 2%, or whole)

  • Juice of half a lemon

  • 1 tablespoon chopped fresh dill

  • 1/2 teaspoon grated garlic (1 teaspoon if you like it extra garlicy)

  • Salt and fresh ground black pepper to taste


Instructions

  1. Marinate the Chicken:
    In a large bowl, combine the lemon juice, red wine vinegar, olive oil, grated garlic, oregano, parsley, cumin, coriander, salt, and pepper. Add the cubed chicken breasts to the bowl and mix until evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

  2. Prepare the Tzatziki Sauce:
    While the chicken is marinating, prepare the tzatziki sauce. In a medium bowl, combine the shredded cucumber, Greek yogurt, lemon juice, fresh dill, grated garlic, salt, and pepper. Mix well and refrigerate until ready to serve.

  3. Grill the Chicken:
    Preheat the grill or a grill pan over medium-high heat. Thread the marinated chicken onto skewers. Grill the skewers for about 3-4 minutes per side, or until the chicken is fully cooked through and has a nice char.

  4. Serve:
    Serve the chicken skewers hot with a side of tzatziki sauce for dipping. Enjoy with a fresh Greek salad or pita bread for a complete meal.

Notes

For added flavor, you can marinate the chicken overnight for a deeper taste.

You can also cook the chicken skewers in the oven at 400°F for about 20 minutes if you don’t have access to a grill.

If you like your tzatziki more garlicy, feel free to add extra garlic to taste.
