  • 2 tablespoons butter (plus more as needed)

  • 4 medium russet potatoes (68 ounces each)

  • 4 tablespoons neutral-flavored oil (avocado oil, olive oil, etc.)

Instructions

  1. Preheat grill to medium heat (about 375°F).

  2. Wash potatoes thoroughly and pat dry. Pierce each potato several times with a fork.

  3. Rub potatoes with neutral oil to coat evenly.

  4. Wrap each potato in foil. Place on the grill and cook for about 45–60 minutes, turning occasionally, until tender when pierced with a fork.

  5. Carefully remove foil, slice potatoes open lengthwise, and fluff insides with a fork.

  6. Add butter and your favorite toppings like sour cream, cheese, and green onions. Serve immediately.

Notes

For a crisper skin, unwrap potatoes during the last 10 minutes of grilling.

Use a grill basket to prevent smaller potatoes from falling through grates.

Russet potatoes work best for fluffy interiors.
