Crust:

  • Cooking spray

  • 1 (20-oz.) bag frozen shredded hash brown potatoes

  • 2 oz. sharp cheddar, shredded (about ½ cup)

  • 2 Tbsp. unsalted butter, melted

  • ½ tsp. garlic powder

  • ½ tsp. kosher salt

  • ¼ tsp. freshly ground black pepper

Filling & Assembly:

  • 1 Tbsp. cornstarch

  • 6 large eggs, divided

  • 2 cups sour cream

  • 1 cup whole milk

  • 2 Tbsp. Dijon mustard

  • ½ tsp. kosher salt

  • ¼ tsp. freshly ground black pepper

  • 8 oz. bacon (about 8 slices), cut into 1-inch pieces

  • 1 bunch scallions, white and dark green parts separated, thinly sliced

  • 4 oz. sharp cheddar, shredded (about 1 cup), divided


Instructions

  • Prepare the crust: Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish with cooking spray. Combine the hash brown potatoes, 2 oz. sharp cheddar, melted butter, garlic powder, salt, and pepper in a bowl. Press this mixture evenly into the bottom of the pie dish to form a crust. Bake for 20-25 minutes or until golden and crispy.

  • Cook the bacon: While the crust is baking, cook the bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Remove the bacon and set it aside. Drain excess grease from the skillet.

  • Make the filling: In the same skillet, add the white part of the scallions and sauté for 2-3 minutes. In a separate bowl, whisk together the cornstarch, eggs, sour cream, whole milk, Dijon mustard, salt, and pepper.

  • Assemble the quiche: Once the crust is done, sprinkle the bacon, sautéed scallions, and half of the shredded cheddar (2 oz.) over the crust. Pour the egg mixture over the top, then sprinkle the remaining cheddar on top.

  • Bake the quiche: Bake the quiche at 375°F (190°C) for 35-40 minutes, or until the center is set and the top is golden brown.

 

  • Let the quiche cool slightly before slicing. Serve warm.

Notes

  • For a crunchier crust, press the hash browns firmly into the dish and bake longer if needed.

  • You can use turkey bacon as a substitute for regular bacon for a lighter version.
