  • 1 can (15 oz) green beans (drained)
  • 1 can (15 oz) diced tomatoes (drained)
  • 1 cup frozen corn kernels
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup shredded cheddar cheese
  • 1 package (about 4 cups) frozen tater tots
  • 1/2 cup beef broth (optional, for added moisture)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for sautéing)

Instructions

  • Preheat Oven:
    Preheat your oven to 375°F (190°C).

  • Cook Ground Beef:
    In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks. Drain excess fat if needed.

  • Add Vegetables:
    Add the chopped onion and minced garlic to the skillet and sauté for 2-3 minutes, until softened. Then add the drained green beans, diced tomatoes, and frozen corn. Stir to combine. Season with salt and pepper to taste.

  • Assemble the Casserole:
    Transfer the beef and vegetable mixture to a baking dish (9×13-inch recommended). Arrange the frozen tater tots in a single layer on top of the beef mixture.

  • Bake:
    Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden and crispy.

  • Top with Cheese:
    Remove the casserole from the oven and sprinkle the shredded cheddar cheese on top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese has melted and is bubbly.

  • Serve:
    Let the casserole sit for a few minutes before serving. Serve hot and enjoy!
