Description

A comforting and hearty casserole made with seasoned ground beef, tender potatoes, and melted cheese. This simple yet flavorful dish is perfect for a family dinner or meal prep, and it’s customizable with the addition of milk for extra creaminess.

Ingredients

Scale
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • ½ cup beef broth or water
  • ¼ cup milk (optional, for extra creaminess)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked (about 5-7 minutes). Drain any excess fat if necessary.
  3. Stir in the chopped onions and minced garlic. Cook for 3-4 minutes, until the onion becomes soft and translucent.
  4. Spread the ground beef mixture evenly in the bottom of the prepared baking dish. Layer the thinly sliced potatoes on top and season with salt, pepper, Italian seasoning, and paprika.
  5. Sprinkle the shredded cheddar and grated Parmesan cheese over the potatoes.
  6. Pour the beef broth or water around the edges to keep everything moist. For extra creaminess, drizzle with milk.
  7. Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for another 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  8. Let the casserole rest for 5 minutes, then sprinkle with fresh parsley before serving.

Notes

  • For a more decadent casserole, add some sour cream or cream cheese to the beef mixture.
  • You can use other cheeses like mozzarella or gouda for a different flavor profile.
  • This casserole can be made ahead of time and stored in the fridge for up to 2 days, or frozen for up to 3 months. Reheat before serving.
