Ingredients

2 cups corn kernels (about 4 ears)

½ cup flour (all-purpose, corn flour, or rice flour)

½ cup grated cheddar cheese

¼ cup cream cheese, softened to room temperature

2+ jalapeno peppers, diced (adjust for spice level)

2 slices cooked bacon, crumbled (optional)

1 tsp smoked paprika

1 tsp coriander seeds, toasted and ground

2 green onions, thinly sliced

1 handful cilantro, chopped

Zest and juice of 1 lime

Instructions

In a large bowl, combine corn kernels, flour, egg, cheddar cheese, cream cheese, diced jalapenos, bacon (if using), smoked paprika, ground coriander, green onions, cilantro, lime zest, and lime juice. Mix well until fully incorporated.

Heat oil in a large skillet over medium heat.

Scoop spoonfuls of the batter and carefully drop into the hot oil, flattening slightly to form fritters.

Fry for about 3–4 minutes per side, or until golden brown and crispy.

Remove fritters and drain on paper towels.

Notes
