Ingredients

2 cups corn kernels (about 4 ears fresh corn)

½ cup all-purpose flour (or corn flour, rice flour, etc.)

1 egg

½ cup cheddar cheese, grated

¼ cup cream cheese, room temperature

2 or more jalapeño peppers, diced (adjust to heat preference)

2 slices bacon, cooked and crumbled (optional)

1 teaspoon smoked paprika

1 teaspoon coriander, toasted and ground

2 green onions, sliced

1 handful cilantro, chopped

1 lime, zest and juice

2 tablespoons oil (for frying)
Instructions

In a large bowl, combine corn, flour, egg, cheddar cheese, cream cheese, jalapeños, bacon, smoked paprika, coriander, green onions, cilantro, lime zest, and juice. Mix well until a thick batter forms.

Heat oil in a skillet over medium heat.

Scoop about 2 tablespoons of batter per fritter and flatten slightly. Place into the hot pan, spacing evenly.

Fry for 3–4 minutes per side, or until golden brown and crispy.

Transfer to a paper towel-lined plate to drain excess oil.

Serve hot with your favorite dipping sauce or jalapeño popper-inspired dressing.
Notes
Add more jalapeños for a spicier kick or remove seeds for a milder taste.
Bacon is optional but adds great smoky flavor.
For a vegetarian version, simply omit the bacon.
