6 oz white mushrooms, sliced

5 slices bacon, cooked and chopped

Instructions

Prepare the Chicken Thighs:
Season the chicken thighs generously with salt, pepper, and Italian seasoning. Heat the vegetable oil in a large skillet over medium-high heat. -
Cook the Chicken:
Add the chicken thighs, skin-side down, to the skillet. Cook for 6-7 minutes on each side, until the skin is crispy and the chicken is cooked through. Remove the chicken from the skillet and set aside. -
Make the Mushroom Sauce:
In the same skillet, add the chopped bacon and cook for 1-2 minutes until crispy. Add the sliced mushrooms and sauté for 5 minutes until they soften and release their moisture. -
Add the Cream and Seasoning:
Pour in the heavy cream and add the fresh thyme and 1/8 teaspoon of salt. Stir the mixture and bring it to a simmer. Let the sauce cook for another 5 minutes until it thickens and becomes creamy. -
Combine and Serve:
Return the chicken thighs to the skillet and spoon some of the creamy mushroom sauce over them. Let the chicken simmer in the sauce for an additional 3-4 minutes, allowing the flavors to meld together. -
Serve:
Serve the chicken thighs with the creamy mushroom sauce, and garnish with extra fresh thyme if desired.
