- 2 cups heavy cream
- 3/4 cup low-sodium chicken broth
- 1 cup Parmesan cheese
- 1 tablespoon Cajun seasoning
- Salt and pepper, to taste
- Cayenne pepper, optional to taste
Instructions
-
Prepare the Chicken:
- Season the thinly sliced chicken breasts with salt, pepper, and Cajun seasoning.
- Dredge the chicken in flour, then dip it in the beaten eggs, and coat it in a mixture of panko breadcrumbs and grated Parmesan cheese.
- Heat oil in a large skillet over medium heat and fry the chicken until golden and crispy, about 4-5 minutes per side. Once cooked, set aside on a paper towel to drain.
-
Prepare the Pasta:
- Heat olive oil in a large pan over medium heat. Add garlic and sauté for about 1 minute until fragrant.
- Add the mushrooms, bell peppers, and onions, and sauté until tender, about 5-6 minutes. Season with salt and pepper.
- Stir in the cooked bowtie pasta and toss to combine with the vegetables. Set aside while you make the sauce.
-
Make the Cajun Cream Sauce:
- In the same pan, melt butter over medium heat. Stir in the flour and cook for about 1 minute, creating a roux.
- Slowly add the heavy cream and chicken broth, whisking constantly until the sauce begins to thicken, about 3-5 minutes.
- Stir in the Parmesan cheese and Cajun seasoning, adjusting salt and pepper to taste. For extra heat, add cayenne pepper to taste.
- Once the sauce is thickened, reduce the heat and add the sautéed vegetables and pasta to the sauce. Toss until everything is well coated and warmed through.
-
Assemble the Dish:
- Serve the creamy pasta on plates and top with the crispy Cajun chicken. Garnish with extra Parmesan if desired.
Notes
- For a spicier dish, add more Cajun seasoning or cayenne pepper.
- You can substitute chicken breasts with chicken thighs for a juicier option.
- This dish pairs perfectly with a simple side salad or garlic bread.
