  • 4 large eggs

  • 1 block (200g) feta cheese, crumbled

  • 1 cup cherry tomatoes, halved

  • 1/4 cup Kalamata olives, pitted and chopped

  • 1 tablespoon olive oil

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • Salt and pepper, to taste

  • Fresh parsley or basil for garnish (optional)

  • Crusty bread, for serving (optional)


Instructions

  • Preheat the oven to 375°F (190°C) and grease a small baking dish or oven-safe skillet.

  • Arrange the crumbled feta cheese and cherry tomatoes in the baking dish. Scatter the chopped Kalamata olives around the feta.

  • Drizzle the olive oil over the feta, tomatoes, and olives. Sprinkle with dried oregano, thyme, salt, and pepper.

  • Make 4 small wells in the mixture for the eggs. Crack an egg into each well, being careful not to break the yolks.

  • Season the eggs with a pinch of salt and pepper, and bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny (or bake longer for firmer yolks).

 

  • Garnish with fresh parsley or basil, if desired, and serve with crusty bread for dipping.

Notes

  • You can adjust the number of eggs depending on the size of your baking dish and how many servings you need.

  • Feel free to add other Mediterranean ingredients like roasted red peppers, artichokes, or spinach for extra flavor and texture.
