Ingredients

12 oz spaghetti

2 chicken breasts, cooked and chopped

1 cup Monterey Jack cheese, shredded

½ cup Parmesan cheese, shredded

1 cup sour cream

1 egg, beaten

10 oz frozen chopped spinach, thawed and drained

3 cloves garlic, minced (or 1 tablespoon garlic powder)

2 cans (10 oz each) cream of chicken soup

1 teaspoon onion powder

6 oz French fried onions, divided (about 1 standard can)
Instructions

Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Cook spaghetti according to package directions. Drain and set aside.

Mix the base: In a large mixing bowl, combine sour cream, beaten egg, cream of chicken soup, garlic, onion powder, Monterey Jack cheese, Parmesan cheese, chopped spinach, and chopped cooked chicken.

Add cooked spaghetti to the mixture and stir until well combined.

Stir in half of the French fried onions.

Pour mixture into the prepared baking dish and spread evenly.

Top with remaining French fried onions.

Bake uncovered for 30–35 minutes, or until heated through and bubbling.
Notes
Substitute rotisserie chicken for a faster prep.
You can use fresh spinach (lightly sautéed) instead of frozen.
For extra richness, add a little shredded cheddar or cream cheese.
