Chicken Marinade:

  • 6 pounds chicken pieces with bones (legs, thighs, wings, etc.)
  • 1 cup yellow prepared mustard
  • 1 tablespoon season salt
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon black pepper
  • 1 tablespoon dried parsley flakes

Chicken Crust:

 

  • 3 cups flour
  • 2 teaspoons season salt
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • Oil for frying (vegetable oil, canola oil, or peanut oil)

Instructions

  • Prepare the Chicken Marinade:

    • In a large bowl, combine the mustard, season salt, garlic powder, paprika, black pepper, and parsley flakes.
    • Add the chicken pieces to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours or overnight for best flavor. The mustard helps tenderize the chicken while adding a tangy flavor.
  • Prepare the Chicken Crust:

    • In a separate large bowl, combine the flour, season salt, black pepper, garlic powder, and paprika. Mix well to ensure the spices are evenly distributed throughout the flour.
  • Coat the Chicken:

    • After marinating, remove the chicken pieces from the mustard marinade and dredge them in the seasoned flour mixture. Make sure the chicken is thoroughly coated on all sides.
  • Fry the Chicken:

    • Heat oil in a large skillet or deep fryer over medium-high heat. The oil should be deep enough to fully submerge the chicken pieces.
    • Carefully place the coated chicken pieces into the hot oil. Fry the chicken in batches, making sure not to overcrowd the pan, for about 12-15 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
    • Once cooked, remove the chicken from the oil and drain on a paper towel-lined plate to remove excess oil.

 

  • Serve:

    • Serve the crispy mustard fried chicken with your favorite sides, such as mashed potatoes, coleslaw, or cornbread.

Notes

  • For an extra crispy crust, double dip the chicken: after the first coat of flour, dip the chicken back into the marinade and coat it in flour again before frying.
  • Adjust the seasoning to your taste preferences if you’d like to make it spicier or more savory.
