Description

This One Pot Chicken Alfredo is a creamy, rich pasta dish made with tender diced chicken, garlic, and a flavorful Alfredo sauce. All cooked in one pot for easy cleanup and full of cheesy goodness!


Ingredients

  • 4 tablespoons olive oil, divided
  • 1 1/2 pounds chicken breast, diced
  • 4 cloves garlic, minced
  • 1 quart low sodium chicken broth
  • 2 cups heavy cream
  • 1 pound penne pasta
  • 4 cups parmesan cheese, freshly shredded with a microplane
  • Salt and pepper to taste

 

  • Parsley, for garnish

Instructions

  • Cook the Chicken: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the diced chicken breast and cook until browned on all sides and cooked through (about 7-8 minutes). Remove the chicken from the pot and set aside.
  • Sauté Garlic: In the same pot, add the remaining 2 tablespoons of olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  • Add Liquids: Pour in the chicken broth and heavy cream. Stir to combine.
  • Cook the Pasta: Add the penne pasta to the pot and stir to submerge it in the liquid. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 12-15 minutes, or until the pasta is al dente, stirring occasionally to ensure the pasta doesn’t stick.
  • Add Cheese and Chicken: Once the pasta is cooked, return the cooked chicken to the pot. Stir in the freshly shredded parmesan cheese, a little at a time, until the sauce becomes creamy and thickens. Season with salt and pepper to taste.

 

  • Serve: Garnish with chopped parsley and serve hot.

Notes

  • For extra flavor, you can add some crushed red pepper flakes or sauté some mushrooms along with the garlic.
  • If the sauce gets too thick, you can add more chicken broth or cream to reach your desired consistency.
