Smoked paprika (for subtle smoky flavor, adjust to taste)
Instructions

Peel and devein the prawns, leaving tails on if desired. Pat dry.

In a bowl, whisk eggs with a splash of water to make a light batter.

In a separate shallow dish, place plain flour. In another dish, place panko breadcrumbs mixed with smoked paprika.

Dredge each prawn in flour, shaking off excess.

Dip into the egg mixture, then coat thoroughly with the panko breadcrumb mixture.

Heat oil in a deep fryer or heavy pan to 350°F (175°C).

Fry shrimp in batches until golden brown and crispy, about 2–3 minutes per side.

Remove with a slotted spoon and drain on paper towels. Serve hot with dipping sauce.
Notes
For extra flavor, add garlic powder or cayenne pepper to the flour or panko mix.
Serve with cocktail sauce, aioli, or sweet chili sauce.
