Ingredients
For the Chicken:

1 cup all-purpose flour

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon paprika

1 teaspoon ground mustard

Kosher salt and freshly ground black pepper, to taste

3 large eggs

16 to 20 ounces potato chips (your favorite BBQ or salt and vinegar flavor; Zapp’s Voodoo recommended)

2 pounds boneless chicken breasts, cut into strips
For the Honey Mustard Sauce:

½ cup honey

5 tablespoons mayonnaise

¼ cup Dijon mustard

1 tablespoon yellow mustard

1 tablespoon whole-grain mustard

¼ teaspoon garlic powder

Kosher salt, to taste
Instructions

Prepare the coating:

In a shallow bowl, combine flour, garlic powder, onion powder, paprika, ground mustard, salt, and pepper.

In a separate bowl, beat the eggs.

Crush the potato chips finely in a large bowl or bag.

Coat the chicken:

Dip each chicken strip first in the flour mixture, shaking off excess.

Then dip into the beaten eggs.

Finally, press the chicken into the crushed potato chips, ensuring an even coating. Set aside on a plate.

Cook the chicken:

Fry the coated chicken strips in hot oil (about 350°F / 175°C) until golden brown and cooked through, about 4-6 minutes per side. Alternatively, bake at 400°F (200°C) for 20–25 minutes, flipping halfway, until crispy and cooked through.

Make the honey mustard sauce:

In a small bowl, whisk together honey, mayonnaise, Dijon mustard, yellow mustard, whole-grain mustard, garlic powder, and salt until smooth.
