Ingredients
For the Chicken:

1 cup all-purpose flour

3 large eggs

16 to 20 ounces of your favorite BBQ or salt and vinegar potato chips (Zapp’s Voodoo chips recommended)

2 pounds boneless chicken breasts, cut into strips
For the Honey Mustard Sauce:

½ cup honey

5 tablespoons mayonnaise

¼ cup Dijon mustard

1 tablespoon yellow mustard

1 tablespoon whole-grain mustard

¼ teaspoon garlic powder

Kosher salt (to taste)

Prepare the chicken: In a shallow bowl, combine the all-purpose flour, garlic powder, onion powder, paprika, ground mustard, salt, and pepper. Whisk to combine.

Dredge the chicken: In another shallow bowl, beat the eggs. Dip each chicken strip into the flour mixture, coating it evenly, then dip it into the beaten eggs, and finally coat it in crushed potato chips.

Fry the chicken: Heat oil in a large skillet over medium-high heat. Once the oil is hot, add the coated chicken strips and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken and place it on a paper towel-lined plate to drain any excess oil.

Make the honey mustard sauce: In a small bowl, whisk together the honey, mayonnaise, Dijon mustard, yellow mustard, whole-grain mustard, garlic powder, and salt until smooth.

Feel free to adjust the type of mustard based on your preference for spiciness or tang.
