Description

This one-pan Sausage and Rice Skillet combines savory sausage, tender rice, and a medley of vegetables, all cooked together in a deliciously seasoned sauce. It’s an easy and satisfying meal, perfect for busy weeknights or when you’re craving something comforting.

  • 1 lb (450g) sausage (Italian sausage, smoked sausage, or your favorite variety), casing removed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 1/2 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the sausage: In a large skillet or sauté pan, heat the olive oil over medium heat. Add the sausage (breaking it into smaller pieces with a wooden spoon) and cook for about 5-7 minutes, or until browned and cooked through. Remove the cooked sausage from the skillet and set it aside.

  2. Sauté the vegetables: In the same skillet, add the diced onion, bell pepper, and garlic. Cook for about 3-4 minutes, until softened and fragrant.

  3. Add the rice and seasonings: Stir in the rice and cook for 1-2 minutes to toast it slightly and coat it in the seasonings. Add the paprika, thyme, garlic powder, salt, and pepper, and stir to combine.

  4. Cook the rice: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.

  5. Add the sausage and peas: Once the rice is cooked, stir in the cooked sausage and frozen peas (if using). Cover the skillet and let everything heat through for 2-3 minutes.

  6. Garnish and serve: Remove the skillet from the heat, garnish with fresh chopped parsley, and serve immediately.

Notes

  • Feel free to use any type of sausage you like—Italian sausage, chicken sausage, or even smoked sausage for added flavor.
  • You can add other vegetables like corn, zucchini, or spinach for more variety.
