Ingredients
- 1 lb (450g) sausage (Italian sausage, smoked sausage, or your favorite variety), casing removed
- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 1/2 cups chicken broth
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1/2 cup frozen peas (optional)
- Fresh parsley, chopped (for garnish)

Cook the sausage: In a large skillet or sauté pan, heat the olive oil over medium heat. Add the sausage (breaking it into smaller pieces with a wooden spoon) and cook for about 5-7 minutes, or until browned and cooked through. Remove the cooked sausage from the skillet and set it aside.

Sauté the vegetables: In the same skillet, add the diced onion, bell pepper, and garlic. Cook for about 3-4 minutes, until softened and fragrant.

Add the rice and seasonings: Stir in the rice and cook for 1-2 minutes to toast it slightly and coat it in the seasonings. Add the paprika, thyme, garlic powder, salt, and pepper, and stir to combine.

Cook the rice: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.

Add the sausage and peas: Once the rice is cooked, stir in the cooked sausage and frozen peas (if using). Cover the skillet and let everything heat through for 2-3 minutes.
