Description

These homemade Sausage Rolls are a savory, flaky pastry filled with seasoned sausage meat. Perfect as an appetizer, snack, or party food, they are easy to make and packed with flavor. The golden, crispy puff pastry and juicy sausage filling make these irresistible, whether you’re serving them hot or cold.


Ingredients

  • 1 lb (450g) sausage meat (or sausages, casings removed)
  • 1/4 cup breadcrumbs (optional, to bind the filling)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • Salt and pepper to taste
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg (for egg wash)
  • 1 tbsp olive oil (for cooking)
  • Optional: 1/4 tsp chili flakes for heat (optional)

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a pan over medium heat, heat the olive oil and sauté the chopped onion and garlic until softened and translucent (about 3-4 minutes). Set aside to cool slightly.
  • In a large bowl, combine the sausage meat, breadcrumbs (if using), cooked onion and garlic, thyme, sage, salt, and pepper. Mix until everything is well combined.
  • Roll out the puff pastry sheet on a lightly floured surface to about 1/4-inch thickness.
  • Divide the sausage mixture in half and form two long sausage shapes along the center of the pastry sheet.
  • Carefully fold the sides of the pastry over the sausage mixture to enclose it, pinching the edges to seal.
  • Using a sharp knife, cut each roll into 8-10 pieces, depending on your preferred size.
  • Beat the egg and brush it over the top of each sausage roll to give them a golden, glossy finish.
  • Place the rolls on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed.
  • Remove from the oven and let them cool for a few minutes before serving. Enjoy warm or at room temperature!

Notes

  • For extra flavor, you can add grated cheese, a little mustard, or a splash of Worcestershire sauce to the sausage filling.
  • These sausage rolls freeze well. Simply assemble them, freeze them on a baking sheet, then transfer them to a freezer bag. Bake from frozen at 400°F (200°C) for 25-30 minutes.
  • If you don’t have puff pastry, you can also use shortcrust pastry for a different texture.
