Description

A luxurious seafood twist on classic lasagna, featuring tender shrimp layered with creamy ricotta, melted mozzarella, and a rich, garlicky white sauce infused with a splash of white wine and bright lemon juice. This elegant dish is perfect for dinner parties or special occasions.

  • 9 lasagna noodles

  • 4 Tbsp butter

  • 34 cloves garlic, minced

  • ¼ cup all-purpose flour

  • ¼ cup Sauvignon Blanc or Pinot Grigio (or substitute clam juice, water, or broth)

  • 3 cups whole milk

  • 1 tsp salt, divided

  • 1 tsp pepper, divided

  • 1 large egg

  • 15 oz ricotta cheese

  • 1 tsp dried basil

  • 3 Tbsp lemon juice

  • ½ cup grated Parmesan cheese

  • lbs cooked shrimp (tails removed, cut into large chunks)

  • 4 cups shredded mozzarella cheese

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook noodles:

    • Boil lasagna noodles in salted water until al dente. Drain and set aside.

  2. Make white sauce (béchamel):

    • In a saucepan, melt butter over medium heat. Add garlic and sauté until fragrant (~1 min).

    • Whisk in flour and cook 1–2 min until lightly golden.

    • Gradually whisk in wine and milk, cooking and stirring until thickened (~5–7 min). Season with ½ tsp salt and ½ tsp pepper.

  3. Prepare ricotta mixture:

    • In a bowl, combine ricotta, egg, dried basil, lemon juice, remaining ½ tsp salt and ½ tsp pepper, and Parmesan. Mix well.

  4. Assemble lasagna:

    • Preheat oven to 375°F (190°C).

    • Spread a thin layer of white sauce in the bottom of a baking dish.

    • Layer noodles, ricotta mixture, shrimp chunks, shredded mozzarella, and white sauce. Repeat layers ending with mozzarella on top.

  5. Bake:

    • Cover with foil and bake 25 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden.

    • Let rest 10 minutes before serving.

  6. Garnish:

    • Sprinkle with fresh parsley.

Notes

Use freshly cooked shrimp for best flavor; frozen shrimp also work well.

Substitute white wine with clam juice or broth for a non-alcoholic version.

For extra depth, add a pinch of nutmeg to the white sauce.

Store leftovers covered in fridge up to 3 days.
