Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice (white, brown, or sushi rice)
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Spicy Mayo:

  • 3 tablespoons mayonnaise
  • 1 tablespoon sriracha sauce (adjust to spice preference)
  • 1 teaspoon lime juice
  • 1 teaspoon soy sauce (optional)

Toppings (optional):

  • Sliced avocado
  • Cucumber slices
  • Green onions, chopped
  • Sesame seeds
  • Pickled ginger

Instructions

  1. Prepare the shrimp: In a bowl, toss the shrimp with olive oil, soy sauce, garlic powder, paprika, salt, and pepper.
  2. Cook the shrimp: Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove from the heat and set aside.
  3. Make the spicy mayo: In a small bowl, mix together mayonnaise, sriracha sauce, lime juice, and soy sauce (if using). Stir until smooth and well combined.
  4. Assemble the bowls: Divide the cooked rice between bowls. Top with the cooked shrimp and drizzle with the spicy mayo.
  5. Add toppings: Garnish with optional toppings such as sliced avocado, cucumber, green onions, sesame seeds, or pickled ginger.
  6. Serve: Serve immediately and enjoy!

Notes

  • For a lighter version, you can use brown rice or cauliflower rice.
  • Adjust the spice level of the mayo to your liking by adding more or less sriracha.
  • You can also add other vegetables like shredded carrots or radishes for extra crunch and flavor.
  • If you’re short on time, using pre-cooked shrimp or leftover rice can speed up the process.
