  • 6 large eggs, hard boiled and chopped

  • 1/2 cup cottage cheese (full-fat or low-fat)

  • 2 tablespoons mayonnaise (optional, for extra creaminess)

  • 1 teaspoon mustard (optional)

  • 1 tablespoon finely chopped red onion (optional)

  • 1 tablespoon fresh chopped parsley or dill (optional)

  • Salt and pepper to taste


Instructions

  • Peel the hard-boiled eggs and chop them into small pieces.

  • In a medium bowl, combine the chopped eggs and cottage cheese.

  • Add mayonnaise and mustard, if using, and stir to combine.

  • Add the chopped red onion, parsley or dill (if desired), and season with salt and pepper to taste.

  • Mix well until all ingredients are evenly combined.
