Slow Cooker Chicken Thighs

Description

Tender, juicy chicken thighs slow-cooked with hearty vegetables in a flavorful broth, creating a comforting one-pot meal that’s both easy to prepare and satisfying.


Ingredients

  • 2 lbs boneless, skinless chicken thighs

  • 2 tablespoons smoked paprika

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 2 lbs baby red potatoes, halved

  • 1 medium red onion, chopped

  • 3 cloves garlic, minced

  • 1 lb baby carrots

  • 1 tablespoon vegetable oil

  • 3 cups chicken broth

  • 3 teaspoons cornstarch

  • 3 teaspoons water


Instructions

  • Trim any excess fat from the chicken thighs and pat dry with paper towels.

  • In a medium bowl, combine the chicken thighs with smoked paprika, salt, and black pepper until evenly coated. Set aside.

  • Place the halved baby red potatoes, chopped red onion, minced garlic, and baby carrots in the bottom of a 5–6 quart slow cooker.

  • Heat vegetable oil in a skillet over medium heat. Add the seasoned chicken thighs and sear until browned on both sides, about 2–3 minutes per side.

  • Transfer the seared chicken thighs to the slow cooker, placing them on top of the vegetables.

  • Pour the chicken broth over the chicken and vegetables in the slow cooker.

  • Cover and cook on low for 6–7 hours, or until the chicken is cooked through and the vegetables are tender.

  • In a small bowl, mix the cornstarch and water to create a slurry.

  • Remove the chicken and vegetables from the slow cooker and set aside.

  • Pour the cooking liquid into a saucepan and bring to a simmer over medium heat.

  • Whisk in the cornstarch slurry and cook until the sauce has thickened, about 2–3 minutes.

 

  • Serve the chicken and vegetables with the thickened sauce poured over the top.

Notes

For added flavor, consider adding fresh herbs like thyme or rosemary to the slow cooker.

If you prefer a crispy skin on the chicken, broil the thighs in the oven for 3–5 minutes after searing.

This recipe can be made ahead and stored in the refrigerator for up to 3 days.
