Ingredients

2 lbs yellow potatoes, cut into large 2-inch chunks

½ medium yellow onion, cut into chunks

5 cloves garlic, minced

2 ½ teaspoons dried oregano

1 teaspoon dried basil

1 teaspoon dried rosemary, crushed

Salt and freshly ground black pepper, to taste

3 lbs bone-in, skin-on chicken thighs, trimmed of excess skin

1 ½ tablespoons olive oil

½ cup chicken broth

3 ½ tablespoons fresh lemon juice

2 teaspoons lemon zest, divided

3 tablespoons fresh parsley, chopped
Instructions

Place potatoes, onions, garlic, oregano, basil, rosemary, salt, and pepper in the bottom of your slow cooker.

In a small bowl, mix olive oil, chicken broth, lemon juice, and 1 teaspoon of lemon zest.

Pat chicken thighs dry and season with salt, pepper, and remaining 1 teaspoon lemon zest.

Place chicken thighs on top of the vegetable mixture in the slow cooker.

Pour the olive oil and lemon juice mixture evenly over the chicken and vegetables.

Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and potatoes are tender.

Before serving, sprinkle with fresh parsley.

Serve hot with extra lemon wedges if desired.
Notes
For crispier skin, you can sear the chicken thighs in a hot skillet before placing them in the slow cooker.
Leftovers keep well refrigerated for up to 3 days.
Adjust lemon juice to taste for more tang.
