Tender chicken thighs simmered in a sweet and savory honey garlic sauce, creating a flavorful dish that’s perfect over rice or quinoa.
Ingredients

1½ pounds boneless, skinless chicken thighs or breasts

⅓ cup low-sodium soy sauce

⅓ cup honey
-
2 tablespoons tomato paste

2 teaspoons chili paste (sambal oelek, sriracha, or hot sauce of choice)

4 cloves garlic, minced

1 tablespoon rice vinegar

2 tablespoons cornstarch

For Serving:

Prepared brown rice, quinoa, or cauliflower rice

Toasted sesame seeds

Chopped green onions

Instructions

Place the chicken thighs in the bottom of the slow cooker.

In a bowl, whisk together the soy sauce, honey, tomato paste, chili paste, minced garlic, and rice vinegar. Pour this mixture over the chicken.

Cover and cook on LOW for 4–6 hours or until the chicken is tender.

Remove the chicken from the slow cooker and set aside.

In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.

Pour the slurry into the sauce in the slow cooker and stir well.

Return the chicken to the slow cooker and stir to coat with the thickened sauce.

Serve the chicken over prepared rice or quinoa. Garnish with toasted sesame seeds and chopped green onions.
Notes
For added flavor, marinate the chicken in the sauce mixture for 1 hour before cooking.
Adjust the amount of chili paste to control the heat level to your preference.
