Slow Cooker Honey Garlic Chicken

Description

Tender chicken thighs simmered in a sweet and savory honey garlic sauce, creating a flavorful dish that’s perfect over rice or quinoa.


Ingredients

  • 1½ pounds boneless, skinless chicken thighs or breasts

  • ⅓ cup low-sodium soy sauce

  • ⅓ cup honey

  • 2 tablespoons tomato paste

  • 2 teaspoons chili paste (sambal oelek, sriracha, or hot sauce of choice)

  • 4 cloves garlic, minced

  • 1 tablespoon rice vinegar

  • 2 tablespoons cornstarch

  • For Serving:

    • Prepared brown rice, quinoa, or cauliflower rice

    • Toasted sesame seeds

    • Chopped green onions


Instructions

  • Place the chicken thighs in the bottom of the slow cooker.

  • In a bowl, whisk together the soy sauce, honey, tomato paste, chili paste, minced garlic, and rice vinegar. Pour this mixture over the chicken.

  • Cover and cook on LOW for 4–6 hours or until the chicken is tender.

  • Remove the chicken from the slow cooker and set aside.

  • In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.

  • Pour the slurry into the sauce in the slow cooker and stir well.

  • Return the chicken to the slow cooker and stir to coat with the thickened sauce.

 

  • Serve the chicken over prepared rice or quinoa. Garnish with toasted sesame seeds and chopped green onions.

Notes

For added flavor, marinate the chicken in the sauce mixture for 1 hour before cooking.

Adjust the amount of chili paste to control the heat level to your preference.
