Ingredients

1 pound grass-fed ground beef

Kosher salt and pepper, to taste

4 flour tortillas

4 slices American or sharp cheddar cheese

1 cup shredded iceberg lettuce

Sliced dill pickles

Instructions

Preheat a large skillet or griddle over medium-high heat.

Divide the ground beef into 4 equal portions and form loose balls—don’t compact too much.

Place each ball onto the hot skillet and smash down firmly with a spatula to form thin patties.

Season patties with kosher salt and pepper.

Cook for about 2-3 minutes on the first side until a crust forms. Flip the patties.

Immediately add a slice of cheese on each patty and cook for another 1-2 minutes until cheese melts and patties are cooked through.

Warm the flour tortillas briefly in a pan or microwave.

Assemble tacos by placing each smash burger patty on a tortilla, then topping with shredded iceberg lettuce and sliced dill pickles.

Serve with chipotle ranch on the side for dipping or drizzling.
Notes
For extra flavor, you can toast the tortillas lightly before assembling.
Add sliced tomatoes or onions for more toppings if desired.
