Description
This irresistible Toffee Chex Mix is a sweet and salty snack that’s perfect for parties, holidays, or anytime cravings. Loaded with crunchy cereal, assorted nuts, and pretzels, it’s all coated in a rich, buttery toffee glaze that will keep everyone coming back for more!
Ingredients
1 (12.8 oz) box Rice or Corn Chex Cereal
3 cups assorted nuts (pecans, almonds, peanuts, etc.)
3 cups pretzel thins or mini pretzel knots
1 cup unsalted butter
2 cups dark brown sugar
¾ cup light corn syrup
1 tsp salt
2 tsp pure vanilla extract
1 tsp baking soda
Instructions
Preheat your oven to 250°F (120°C).
In a large mixing bowl, combine the Chex cereal, nuts, and pretzels.
In a saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt. Bring to a boil and cook for 4–5 minutes, stirring constantly.
Remove from heat and stir in vanilla extract and baking soda. The mixture will bubble and foam—this is normal.
Immediately pour the toffee mixture over the cereal mixture and gently stir to coat everything evenly.
Spread the mixture onto a large parchment-lined baking sheet.
Bake for 1 hour, stirring every 15 minutes to ensure even coating.
Remove from the oven and let cool completely. Break into pieces and store in an airtight container.
Notes
Store in an airtight container at room temperature for up to 1 week.
Feel free to customize with your favorite nuts or even add chocolate chips after cooling.
You can substitute with gluten-free pretzels and cereal for a gluten-free version
