Description
This Traeger Mississippi Pot Roast is a melt-in-your-mouth, flavorful dish that is made with a chuck roast, pepperoncini peppers, ranch dressing, and au jus. Cooked low and slow on a Traeger smoker or in the oven, the roast becomes tender and juicy, perfect for any dinner or special occasion.
Ingredients

5-pound beef chuck roast

1 teaspoon salt

1 teaspoon paprika

1 teaspoon onion powder
-
1 teaspoon black pepper

8 whole pepperoncini peppers

1 packet au jus mix
-
1 packet dry ranch dressing mix

1/2 teaspoon granulated garlic

1/4 cup chopped carrots
-
1 stick salted butter
-
1/2 cup water
Instructions

Prepare the Roast:

Preheat your Traeger smoker to 250°F (120°C) or set your oven to the same temperature.

Season the chuck roast on all sides with salt, paprika, onion powder, black pepper, and granulated garlic.

Prepare the Pot Roast:

Place the seasoned roast in the center of a large roasting pan or baking dish.

Sprinkle the ranch dressing mix and au jus mix over the top of the roast.

Add the chopped carrots around the roast in the pan.

Add the Liquid and Butter:
-
Pour the water into the pan around the roast. Place the whole pepperoncini peppers around the roast and add the stick of salted butter on top of the roast.

Cook the Roast:

Place the pan in the preheated Traeger or oven.

Roast the beef for about 4 to 5 hours, or until the roast is tender and easily pulls apart with a fork.

Check the roast halfway through cooking, adding more water if necessary to keep the bottom of the pan moist.

Shred the Meat:

Once the roast is done, remove it from the oven or smoker and let it rest for about 10 minutes.

Shred the roast using two forks, mixing in the pepperoncini peppers and some of the juice from the pan for extra flavor.

Serve:

Serve the shredded pot roast with its juices and vegetables. It’s perfect on its own or served with mashed potatoes, rice, or crusty bread.

Notes
If you like a spicier roast, you can add extra pepperoncini peppers or include a bit of the pepper juice.
The roast will be very tender, so be sure to let it rest before shredding for the best texture.
If you don’t have a Traeger or smoker, this can easily be done in the oven with great results.
