A hearty, flavorful one-pan meal featuring lean ground turkey, sweet potatoes, bell peppers, and smoky spices. Loaded with black beans and corn, topped with melty cheese and fresh cilantro—perfect for a nutritious weeknight dinner.
Ingredients

1 lb ground turkey (85%-93% lean)

1 medium sweet potato, peeled and diced into 1-inch cubes

1/2 red bell pepper, deseeded and chopped

1/2 green bell pepper, deseeded and chopped

1/4 onion, diced

1 can (14.5 oz) fire-roasted diced tomatoes

6 oz corn (fresh, frozen, or canned)

6 oz black beans (rinsed and drained if canned)

2 tsp cumin

2 tsp chipotle chili powder

1 1/2 tsp chili powder

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1/2 cup shredded cheddar, Monterey Jack, or Mexican blend cheese

2 tbsp chopped fresh cilantro, for garnish
Instructions

Heat a large skillet over medium heat. Add ground turkey and cook until browned and cooked through, breaking it up as it cooks (about 6-8 minutes). Drain any excess fat if needed.

Add diced onion, red and green bell peppers to the skillet. Cook for 3-4 minutes until softened.

Stir in sweet potatoes, cumin, chipotle chili powder, chili powder, garlic powder, onion powder, salt, and black pepper. Mix well to coat everything evenly.

Add fire-roasted diced tomatoes (with juices), corn, and black beans. Stir to combine.

Cover and cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.

Sprinkle shredded cheese evenly over the top. Cover and cook another 2-3 minutes until cheese melts.

Garnish with chopped fresh cilantro before serving.
Notes
For extra heat, add a pinch of cayenne or some chopped jalapeño with the peppers.
Swap black beans for pinto or kidney beans if desired.
Serve with warm tortillas or over rice for a complete meal.
