Description

A hearty, flavorful one-pan meal featuring lean ground turkey, sweet potatoes, bell peppers, and smoky spices. Loaded with black beans and corn, topped with melty cheese and fresh cilantro—perfect for a nutritious weeknight dinner.

  • 1 lb ground turkey (85%-93% lean)

  • 1 medium sweet potato, peeled and diced into 1-inch cubes

  • 1/2 red bell pepper, deseeded and chopped

  • 1/2 green bell pepper, deseeded and chopped

  • 1/4 onion, diced

  • 1 can (14.5 oz) fire-roasted diced tomatoes

  • 6 oz corn (fresh, frozen, or canned)

  • 6 oz black beans (rinsed and drained if canned)

  • 2 tsp cumin

  • 2 tsp chipotle chili powder

  • 1 1/2 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup shredded cheddar, Monterey Jack, or Mexican blend cheese

  • 2 tbsp chopped fresh cilantro, for garnish


Instructions

  1. Heat a large skillet over medium heat. Add ground turkey and cook until browned and cooked through, breaking it up as it cooks (about 6-8 minutes). Drain any excess fat if needed.

  2. Add diced onion, red and green bell peppers to the skillet. Cook for 3-4 minutes until softened.

  3. Stir in sweet potatoes, cumin, chipotle chili powder, chili powder, garlic powder, onion powder, salt, and black pepper. Mix well to coat everything evenly.

  4. Add fire-roasted diced tomatoes (with juices), corn, and black beans. Stir to combine.

  5. Cover and cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.

  6. Sprinkle shredded cheese evenly over the top. Cover and cook another 2-3 minutes until cheese melts.

  7. Garnish with chopped fresh cilantro before serving.

Notes

For extra heat, add a pinch of cayenne or some chopped jalapeño with the peppers.

Swap black beans for pinto or kidney beans if desired.

Serve with warm tortillas or over rice for a complete meal.
