Made simply with fresh rhubarb, ginger, orange peel, vodka, and homemade simple syrup, it’s a fantastic way to capture springtime flavors in a bottle.
Ingredients

2 pounds rhubarb, peeled and chopped into 1-inch pieces

5 inches fresh ginger, cut into ¼-inch pieces

Peel of 4 oranges, cut into long strips

1.75 liters good quality vodka

Simple Syrup:

3 cups white sugar

3 cups water

Instructions

Prepare simple syrup: In a saucepan, combine sugar and water. Heat over medium heat, stirring occasionally until the sugar dissolves completely. Remove from heat and let cool to room temperature.

Combine ingredients: In a large glass jar or container, add rhubarb, ginger, and orange peel strips. Pour in vodka and the cooled simple syrup. Stir well to combine.

Infuse: Seal the container tightly and store in a cool, dark place. Let it infuse for 4–6 weeks, shaking the jar gently every few days to mix flavors.

Strain: After infusion, strain the liquid through a fine mesh sieve or cheesecloth to remove solids.

Bottle: Transfer the liqueur into clean bottles. Store in the refrigerator or a cool place.

Serve: Enjoy chilled on its own, over ice, or use in cocktails.
Notes
The longer the infusion, the more intense the flavor. Taste periodically after 4 weeks.
