Homemade Rhubarb Liqueur

  • Author: Norah
  • Total Time: 4–6 weeks (infusion time)
  • Yield: Approximately 2.5 liters of liqueur 1x
  • Diet: Gluten Free

Description

Bright, tart, and infused with fresh ginger and citrus, this homemade rhubarb liqueur is a vibrant and refreshing spirit perfect for cocktails or sipping on its own. Made simply with fresh rhubarb, ginger, orange peel, vodka, and homemade simple syrup, it’s a fantastic way to capture springtime flavors in a bottle.

Ingredients

Scale
  • 2 pounds rhubarb, peeled and chopped into 1-inch pieces

  • 5 inches fresh ginger, cut into ¼-inch pieces

  • Peel of 4 oranges, cut into long strips

  • 1.75 liters good quality vodka

  • Simple Syrup:

    • 3 cups white sugar

    • 3 cups water

Instructions

  1. Prepare simple syrup: In a saucepan, combine sugar and water. Heat over medium heat, stirring occasionally until the sugar dissolves completely. Remove from heat and let cool to room temperature.

  2. Combine ingredients: In a large glass jar or container, add rhubarb, ginger, and orange peel strips. Pour in vodka and the cooled simple syrup. Stir well to combine.

  3. Infuse: Seal the container tightly and store in a cool, dark place. Let it infuse for 4–6 weeks, shaking the jar gently every few days to mix flavors.

  4. Strain: After infusion, strain the liquid through a fine mesh sieve or cheesecloth to remove solids.

  5. Bottle: Transfer the liqueur into clean bottles. Store in the refrigerator or a cool place.

  6. Serve: Enjoy chilled on its own, over ice, or use in cocktails.

Notes

The longer the infusion, the more intense the flavor. Taste periodically after 4 weeks.

This liqueur keeps well for several months when stored properly.
