Ingredients
For the Sandwiches:
- 2 tablespoons Dijon mustard
- 2 tablespoons salted butter
- 2 tablespoons honey
- 4 large croissants

- 8 slices cooked bacon

Prepare the sauce: In a small bowl, whisk together the Dijon mustard, honey, and melted butter. Set aside.

Prepare the eggs: In a medium bowl, whisk together the eggs, a splash of milk, and salt and pepper. In a skillet, melt the tablespoon of butter over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and cooked through, about 3-4 minutes.

Assemble the sandwiches:
- Spread the mustard-honey sauce on the cut sides of the toasted croissants.
- Place a slice of cheese on the bottom half of each croissant, followed by a few slices of ham and bacon.

- Place the top half of the croissant on the sandwich to close it.
