Description

This Easy Cinnamon Roll Casserole is the perfect breakfast or brunch dish! With layers of gooey cinnamon rolls, eggs, and heavy cream, it’s baked to perfection and topped with maple syrup and chopped pecans. A simple yet indulgent way to start your day.

Ingredients

Scale
  • ¼ cup butter, melted

  • 2 (12.4 ounce) cans refrigerated cinnamon rolls with icing

  • 4 large eggs

  • ½ cup heavy cream

  • 2 teaspoons ground cinnamon

  • 2 teaspoons vanilla extract

  • 1 cup chopped pecans

  • ¼ cup maple syrup

Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.

  • Prepare the Cinnamon Rolls:

    • Open the cans of cinnamon rolls and cut each roll into quarters. Arrange the quartered cinnamon rolls evenly in the prepared baking dish.

  • Make the Egg Mixture:

    • In a large bowl, whisk together the eggs, heavy cream, ground cinnamon, and vanilla extract until fully combined.

  • Assemble the Casserole:

    • Pour the egg mixture evenly over the cinnamon rolls in the baking dish, ensuring all pieces are coated.

    • Sprinkle the chopped pecans over the top of the casserole.

  • Bake:

    • Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  • Add the Icing and Serve:

    • While the casserole is baking, heat the icing from the cinnamon rolls in the microwave for about 10-15 seconds, or until soft and drizzle-able.

    • Once the casserole is done, remove it from the oven and drizzle the warmed icing over the top.

    • Finish with a drizzle of maple syrup for extra sweetness.

  • Serve:

    • Allow the casserole to cool slightly before cutting into squares and serving.

Notes

  • You can make this casserole ahead of time by assembling it the night before, covering it, and refrigerating overnight. Bake it the next morning for a quick and easy breakfast.

  • For a twist, try adding chocolate chips or raisins to the casserole before baking.

  • If you prefer a nut-free version, you can leave out the pecans or substitute with chopped walnuts or almonds.
