Instructions

  • Prepare the Ingredients: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. Separate the egg whites and yolks into two bowls.
  • Whip the Egg Whites: Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form.
  • Mix the Yolks and Cottage Cheese: In the bowl with the egg yolks, add the blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using). Mix until smooth.
  • Combine the Mixtures: Gently fold the whipped egg whites into the yolk and cottage cheese mixture in thirds. Use a spatula to fold carefully, maintaining as much air as possible for fluffiness.
  • Shape the Cloud Bread: Scoop the mixture onto the prepared baking sheet, forming 6-8 small rounds or larger pieces depending on your preference. Use the back of a spoon to shape them evenly.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until golden brown and set. Remove from the oven and let the cloud bread cool completely on the baking sheet before serving.
