Description

These Lavender Lemon Bars combine the floral sweetness of lavender with the tartness of fresh lemon. The buttery crust, made with lavender sugar, holds a smooth, tangy lemon filling, and they’re topped with a light dusting of powdered sugar. For the Lavender Sugar:

  • 22.75 oz granulated sugar (3 ¼ cups)

  • 2 tablespoons culinary dried lavender

For the Crust:

  • 8 oz unsalted butter (1 cup), melted and slightly cooled

  • 3.5 oz lavender sugar (1/2 cup)

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon salt

  • 9 oz all-purpose flour (2 cups)

For the Filling:

  • 8 large eggs

  • 1 ¼ cups fresh lemon juice

  • 19.25 oz lavender sugar (2 3/4 cups)

  • Zest of 2 lemons (about 2 tablespoons)

  • 2.25 oz all-purpose flour (1/2 cup)

  • Powdered sugar for serving


Instructions

  1. Prepare the Lavender Sugar:
    In a food processor, pulse the granulated sugar and dried lavender together until the lavender is finely ground and well distributed throughout the sugar. Set aside.

  2. Make the Crust:
    Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and line with parchment paper. In a large bowl, combine the melted butter, lavender sugar, vanilla extract, and salt. Add the flour and mix until a dough forms. Press the dough evenly into the prepared baking dish. Bake for 15-18 minutes, or until the edges are golden. Let the crust cool slightly.

  3. Make the Filling:
    In a large bowl, whisk together the eggs, lemon juice, lavender sugar, lemon zest, and flour. Pour the filling over the cooled crust.

  4. Bake the Bars:
    Return the dish to the oven and bake for 20-25 minutes, or until the filling is set and lightly golden around the edges. The center should still be slightly jiggly.

  5. Cool and Serve:
    Let the bars cool to room temperature. Once cooled, dust with powdered sugar before cutting into squares. Serve and enjoy!

Notes

Be sure to use culinary-grade lavender for the best flavor.

If you prefer a stronger lavender taste, you can increase the amount of dried lavender in the lavender sugar.
