Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar-sized casserole dish.

  2. Prepare the batter: In a mixing bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the buttermilk, vanilla extract, and lemon extract until the mixture is smooth.

  3. Add the melted butter: Pour the melted butter into the bottom of the prepared baking dish, then carefully pour the batter over the butter. Do not stir; the butter will naturally rise to the top as it bakes, creating a rich, golden crust.

  4. Add the lemon filling: Spoon the lemon pie filling evenly over the batter. Again, do not stir. The lemon pie filling will sink and create a delicious, tangy filling as the cobbler bakes.

  5. Bake: Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the filling is bubbling around the edges. The cobbler should set up nicely and have a soft, cake-like top with a lemony filling underneath.

  6. Serve: Let the cobbler cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
