  • Additional peanut butter for drizzling (optional)

Instructions

  • Make the Peanut Butter Mixture: In a mixing bowl, combine the creamy peanut butter, powdered sugar, and brown sugar. Mix until smooth and well combined.
  • Assemble the Graham Crackers: Take one graham cracker and spread a generous layer of the peanut butter mixture over it. Top with another graham cracker to create a sandwich. Repeat with the remaining graham crackers until you run out of the mixture.
  • Chill: Place the filled graham cracker sandwiches in the refrigerator to set for about 30 minutes.
  • Melt the Chocolate: While the filled crackers are chilling, melt the chocolate chips and coconut oil (if using) together in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the mixture is smooth.
  • Dip in Chocolate: Retrieve the graham cracker sandwiches from the fridge. Dip each sandwich quickly into the melted chocolate, then place them on a wax paper-lined baking sheet.
